One of those dishes I make often. You end up eating mostly veggies with a little pasta but it is very satisfying. You can add any veggies that are in season or whatever you have on hand in the fridge. I have used mostly pea pasta for these but any pasta works.
Ingredients
(serves 2)
1 Onion
1 Carrot
1 Bell pepper
3 cups Mushrooms (optional)
3 cups Spinach
1 Zucchini (small)
1 cup Cooked pasta (I used pea but any pasta works)
1 cup Easy Tomato sauce (Posted earlier on my blog)
to taste Olive oil
to taste Salt
Step by Step
Cut the onion in thin strips and grate the carrot.
Place in a hot pan with olive oil and a bit of salt. Caramelize the onions and carrots, do not skip this step as it really helps the flavor. Meanwhile cut the bell pepper into strips.
Once the onions and carrots have caramelized, add the bell pepper and continue cooking. Cut the mushrooms into slices.
Add the mushrooms and continue cooking. At this point you would cut the zucchini if you are using it.
Add the spinach, mix so it wilts, if you are adding zucchini now would be the time to add it, I prefer mine al dente, however if you prefer your zucchini well cooked you could add it before the spinach. The Veggies are now ready, so season with salt and pepper and any other herbs such as basil etc.
Add the cooked pasta, give it a quick mix and then add the tomato sauce, mix all together and pour a little olive oil over it and it is ready.
