This quick almond bread is delicious, almost tastes like a cornbread without the corn. Takes about 15 minutes to make and only 17 minutes to bake. I often serve it on the side when I want a little extra nutrition is also nice with a cup of tea or coffee.
Ingredients:
Almond meal or Flour 1 1/2 cups
Arrowroot Flour 1/4 cup
Golden Flax Meal 1/4 cup
Tapioca Starch 3 Tblsp
Salt 1/4 tsp
Baking soda 1/2 tsp
Eggs 2
Olive Oil 4 Tbsp
Apple Cider Vinegar 1 Tbsp
Maple Syrup or Honey 2 Tbsp (can use less if you want less sweet)
Water 3 Tbsp
Step by Step
In a bowl place all dry ingredients and mix well
Mix all the wet ingredients together, whisk well. If you use honey instead of Maple syrup the final product will be darker as honey browns more in the oven.
Mix the wet ingredients into the dry ones and mix well.
Leave the mixture to sit without mixing it for 10 ,minutes. This is when I usually turn on the oven. Preheat the oven to 350F.
Line a flat pan with wax paper and grease the wax paper
Pour the batter onto the lined pan, spread it out so it is 1 inch thick, it should not be thinner, if you do spread it out thinner it will need less cooking time. Bake at 350F for 17 minutes or until knife inserted in the center comes out just clean.
Leave to cool for a few minutes before cutting. Enjoy, it really is delicious.
