Ready in a few minutes. I use this sauce as a base tomato sauce that I add basil, mushrooms, meatballs, ground turkey, veggies etc. If you leave it cooking longer it gets more depth of flavor but it works well when just made as well.
Ingredients
1,500 gr Peeled chopped tomatoes (I use the Pomi brand that have no other ingredients)
2 Carrots
1 Medium onion
Salt
Olive oil
This sauce takes just a few minutes to put together.
These are ingredients I use, however you can add garlic if you want or more or less carrots or onions. The carrots and onions give it a natural sweetness so you do not need to add sugar.
Step by Step
Roughly chop the carrots and onion. These will be blended so a rough chop is all that is needed.
Toss into a hot pan with some olive oil and salt (this helps the onions sweat) and cook until caramelized, this helps give the sauce more sweetness and flavor since you will not be cooking the sauce for hours.
Place in the blender along with all the tomatoes. Blend well.
Pour into a pot and cook for at least 15-20 minutes, you can of course cook it for longer. It might look a bit orange at first but will turn more red when it cooks. Add salt to taste and pepper if you want.
I put them in mason jars and keep them frozen, I defrost them and add whatever I want and always add a bit of olive oil at the end. Enjoy.
