I make these chopped bean salads whenever I need a quick healthy lunch, the kind you can throw together in a couple of minutes. I always add different veggies and alternate beans to try and vary it as much as I can.
I really try to eat what is in season and I found some very fresh organic radishes so I used those, I found the radish taste to go very well with the cannellini beans, not so sure I would have added them to a black bean salad.
Makes about 3 servings
Ingredients
4 stalks of celery
7 radishes
1 small red bell pepper
1small yellow bell pepper
2 cups cooked green beans
1 avocado
1/2 bunch of cilantro
1 cup of cooked Cannellini beans (I found some in a tetra pack that I use in a pinch)
1 lemon
Olive oil
Apple cider vinegar
salt
cayenne
Chop up radishes and put them in a bowl with 1 lemon and a pinch of salt leave them there while you chop up the other veggies.
Chop up all the other veggies and add them to the bowl, add olive oil and about a tsp of Vinegar, this really depends on how much acidity you like in your salad, mix them all together. Add the beans, salt to taste and a little cayenne, lastly add the avocado and mix it all together.
