Lemon Coriander Marinade for Grilled Chicken

With Spring here grilling season is on, and my husband loves to grill. This is a simple and tasty marinade if you like lemony chicken. We have a charcoal grill and I have found that when he cooks it low and slow the chicken tastes much better.









Ingredients

3 Lbs Skinless, boneless chicken thighs (it comes out great with bone in thighs as well, I use organic which tends to be a bit smaller than conventional)

1 Lemon (you can use lime as well)

2 tblsp Olive oil

2 tsp Salt (I use Pink Himalayan)

4 cloves Garlic

1 1/2 tsp Coriander powder

1pinch Pepper (add more if you like a kick)


Step by Step

In a bowl place raw chicken, if the chicken has a lot of water I suggest that you dry it with a paper towel.

Place all the other ingredients on top and mix well together so all the chicken is evenly coated.

Leave to marinate for at least 1 hour. I often leave it in the fridge overnight, I am just sure to take it out about 1/2 hour before cooking so it gets to room temperature before grilling.
