I found this granola recipe on Elavegan.com and I absolutely give it a thumbs up. I made it once and it has since become a staple in my house. I usually triple or quadruple the recipe and make a big batch at a time.
Makes about 4 1/2 cups
Ingredients:
2 cups Oats (my family prefers the quick oats but it comes out good with rolled
oats as well) 1/2 cup Seeds ( I either put sunflower seeds, pumpkin seeds or sesame seeds) 1/4 cup Shredded coconut (not the reduced fat one, it makes it drier) 1/2 tsp Cinnamon 1/3 tsp Cardamom 1/4 tsp Ginger powder 1/2 cup Nuts (you can put dried fruit if you want, I usually put a mixture of
cashews, Brazil nuts and almonds) 1/4 cup + 1 tbsp Maple syrup 1/4 cup Seed or nut butter ( I usually use almond butter) 1/2 tsp Vanilla
Step by Step
Preheat oven to 325 F
Put all the dry ingredients into a bowl
Mix all the dry ingredients together
Add in the Maple syrup and seed or nut butter
Mix everything together
Lay it out evenly in a pan and bake in the oven at 325 for 10 minutes
Remove from oven and with a spoon press down, this is what helps it get the clumps, if you don't like them, just skip this step
Place back in the oven and bake for 20 minutes at 325 F
Remove from the oven and let it cool for at least 10 minutes. Break it up into pieces with a spatula. Let it cool completely and Enjoy!
Note: the nutrition facts below say 33 servings because it is calculated for how much I usually make at home which is the recipe multiplied many times over.
