Colorful Salad


I love colorful salads, the kind where you just put a bit of everything in. People always ask me what salad dressing I use, the truth is that I use very simple dressings but I DO use salad dressing, I usually put some balsamic, olive oil and salt, depending on what veggies I put in I might add some lemon or apple cider vinegar. I am going to try and find some interesting salad dressings to post for those who are interested.










Ingredients

(These are approximate amounts and make like 10 cups of salad)


1 Red bell pepper

1 1/2 cups Cooked chilled green beans

1 cup Snow peas (I blanche them for about 1 minute in boiling water and then chill)

1 cup Red cabbage

1/2 Cucumber

1 cup Corn (also cooked and chilled)

1 Avocado

1/4 cup Pumpkin seeds

3 cups Mixed greens


Chop all the veggies up. I often have some of the veggies such as in cooked green beans, snow peas, corn already in the fridge so I just give them a rough chop before lunch. I dress the salad at this point with olive oil, balsamic vinegar, a little apple cider vinegar and salt, mix it up and then add the greens and avocado, mix altogether and its ready to eat. This salad is great with protein such as grilled chicken or fish beside it.
