Chocolate covered shortbread

I made this recipe when looking for something that is just slightly sweet, enough to satisfy a sweet craving but not so much that you feel like you are eating a lot of sugar. They must be kept in the fridge unless you want to go through the trouble of tempering the chocolate (which I do not suggest and is not worth the time and effort). I covered them with 72% paleo chocolate. These are perfect for a tea time.







Ingredients makes 48 cookies


1 cup Almond flour

1/4 cup Arrowroot starch

1/4 cup Tapioca starch

1/4 cup Potato starch

1/4 tsp Salt

1/4 cup + 1 tbsp Coconut oil, melted

1 tbsp Almond butter

1 tbsp Almond or plant based milk

1 tbsp Maple syrup

3/4 cup Chocolate morsels 70% Paleo chocolate


Step by Step


In a bowl place Almond flour, Arrowroot starch, Tapioca starch, Potato starch and salt, whisk together.








Melt coconut oil, it should be melted but not too hot. Add almond butter, almond milk and maple syrup, whisk together.







Add the wet ingredients to the dry ones.








Mix together to form a dough.








Place dough between two pieces of parchment paper.








Roll out to about 1/4 inch thick








Cut out cookies. I used a 1 1/2 inch cutter and made about 48 cookies.









Place cookies on to a baking sheet. I usually line my baking sheet with a silicone mat, however it is not entirely necessary, just makes them easier to remove. Bake at 350 F for about 10 minutes. Let them slightly cool before removing them and placing them in the fridge to cool off completely.




Melt chocolate. This can either be done over a double boiler or in the microwave for 30 second intervals, mixing every 30 seconds. I also place the chocolate in a oven safe dish and place it in the warm (but turned off) oven and mix every couple minutes. Once the chocolate is melted, dip the cooled cookies in and place on a silicone mat or a piece of parchment paper.




Place in the fridge to cool. Once they are cooled, remove and place in a sealed container in the fridge. They do keep for a while. Enjoy and let me know if you like them.
